Stella’s Zucchini Bread
Ingredients
- 2-2/3 cups sugar
- 2/3 cup shortening
- 3 cups shredded zucchini 2 medium zucchini
- 2/3 cup water
- 4 eggs room temperature, beaten
- 3-1/3 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1-1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp ground clove
- 2 tsp vanilla extract
- 2/3 cup coarsely chopped nuts (walnuts or pecans)
- 2/3 cup raisins (optional)
Instructions
- In a large bowl mix the following:2-2/3 cups sugar2/3 cup shortening
- Add to bowl and mix well:3 cups shredded zucchini 2/3 cup water4 eggs, room temperature, beaten
- Add one at a time:3-1/3 cups all purpose flour2 tsp baking powder1/2 tsp baking soda1-1/2 tsp salt1 tsp cinnamon1/2 tsp ground cloves2 tsp vanilla extract2/3 cup coarsely chopped nuts (walnuts or pecans)2/3 cup raisins (optional)
- Pour into 2 loaf pans that have been greased on the bottom only
- Bake at 350 pre heated oven (middle rack) for 60 mins
- Check doneness with a toothpick. Enjoy!
